Road Trip

I always love planning a great road trip!! On this road trip my husband I are going from the Chicago Area to Little Rock via St. Louis and Mountain Home (Arkansas).

All told it will be about 1,450 miles in a little over 4 days, but it will be great to spend time with my husband, see family and some fun sights along the way.

The Book of Love

I really like the song "The Book of Love" by Peter Gabriel. The sound is somewhat melancholy, but it makes me so happy to listen to it.

And though I've heard the song at different times, I stayed up way too late last night and ended up watching the movie "Shall We Dance" with Richard Gere and Jennifer Lopez. I was totally surprised I like the movie, ESPECIALLY because the movie all culminates with "The Book of Love". I recommend the whole movie, but if you wanna cheat and just see the good part, check it out:

Pumpkin Chocolate Chip Muffins



















I sent this delicious autumn treat to work with my husband, as well as bringing some to share with my co-workers as well. Everyone enjoyed them. They look and taste great.

RECIPE: Pumpkin Chocolate Chip Muffins

INGREDIENTS:

3/4 Cup Brown Sugar
1/4 Vegetable Oil*
2 Eggs*
1/4 Cup Water
1 Cup Canned Pumpkin
1 1/2 Cup All-Purpose Wheat Flour
3/4 TSP Baking Powder
1/2 TSP Baking Soda
1 1/4 TSP Ground Cinnamon
1 TSP Pumpkin Pie Spice
1/4 TSP Salt
1 Cup Mini Chocolate Chips

DIRECTIONS:

1. Preheat the oven to 350 degrees F. Using Pam (or another kind of baking spray) grease the inside of muffin pan or use liners.

2. Mix all the ingredients, add the Mini Chocolate Chips after everything else has come together.

3. Fill muffin cups about 2/3 full with batter. (I sprayed the 2/3 measuring cup with Pam, for easy pouring). Bake in preheated oven for about 20 minutes, until you can insert a toothpick and it comes out clean.

*Feel free to use Applesauce instead of Vegetable Oil, and Egg Beaters instead of Eggs for a healthier recipe.

These muffins are yummy all by themselves, but are extra yummy warmed and with a little cream cheese. Hope you enjoy!
